This is a great snack idea and great for using up any tomatoes that are starting to get a little too soft. I picked up some wholegrain rye crackers for a rainy day, and I’m so glad I did. Things like this are great to use with leftovers or to use up salad/spreads. I ate this particular one with my quick and easy courgette/zucchini soup (see my full food diary from that day here) and it was the perfect accompaniment but it would also make a great snack.
I chopped the cherry tomatoes and dry fried them in a griddle pan until they were soft and slightly ‘grilled’ looking. I added a dash of sea salt and balsamic vinegar at the end to give them more flavour and then added them to the rye cracker that I had spread hummus on. And that’s all there is to it! Quick, easy and tasty!
