I have developed a real love of cracker toppings recently. I’m sorry if this is cracker spam, and I know these are more quick snack ideas as opposed to full blown recipes, but hopefully they will help some of you in a pickle when you’re not sure what to have and you’re raiding the cupboards.
One of my favourite things to keep in the kitchen recently are crispbreads, crackers and corn thins. I know lots of people like rice cakes, but I often find them too thick and it leaves a powdery, dry chalky taste in my mouth than I am not a fan of, thank you very much. I do however love corn thins (this brand) because they are less chewy, more crispy, and a lot lot thinner which make them more of a cracker. You can do so much with these, dip them in salsa or guacamole, create little sandwiches, break them up on top of salads for texture, or top them like I’ve done here. I buy these both in my local health food store and I know they do them in Whole Foods too but anything similar will do the trick, just check the ingredients, I personally love this brand because there are no preservatives or artificial flavours lurking in there.
I should confess now that I am addicted to grilled peppers. I eat them pretty much every day and I love it. These particular ones are the pre-cooked kind that come in a jar with a light vinegar, and you can get them in the world food aisle of a supermarket or near the olives. I got these in Lidl! These particular ones are huge but they have the same distinctive taste as piquillo peppers, which I became addicted to whilst living in Spain. If anyone understands my love of peppers, the Spanish do. If you don’t have or like these you can use regular bell peppers but I would highly recommend grilling them first as this tastes so much better when the flavour is released.
I use the multigrain corn thins and spread a small amount of light cream cheese on top and then add the peppers, cut into strips before topping with fresh black pepper. I very often add hot sauce, which is amazing.
These are perfect for a morning snack or as an accompaniment to another meal.
