Today was another long drive to London to pack up more of our belongings. I don’t know what it is about driving, but I always get so hungry, and last we were here we did a lot of pizza eating, so this time I planned in advance.
Breakfast was scrambled egg on a slice of wholemeal toast with my favourite, hot sauce!
My mid-morning snack was pineapple. Tesco have started selling whole pineapples but ready to eat, and this needed using up!
I know you’re probably sick of seeing these veggie burgers, me too haha, but I had a huge box that needed using up and they were a quick protein fix before the journey. I had quinoa, pepper, onion, sweetcorn and spinach salad with them.
In-car snacks came in the form of Salt & Vinegar Snack a Jacks and some fruit cups that myself and Matt shared!
Tucking into a huge pizza watching a film isn’t necessarily the worst thing every now and again, but it had happened three times in as many weeks for us thanks to a combination of stress, feeling a bit fed up and being in a foodless flat in the middle of boxes. I knew we would arrive hungry to an empty fridge so I made a last minute executive decision to whip up a batch of chilli before we left complete with quinoa and my one minute healthy garlic dip. Clean, healthy, and ready to be put in the microwave!
