Andddd the food diaries are back! Apologies for the little break but life, as I’m sure you can imagine, has been a little crazy for us recently. It’s been very up and down and we have been moving, living out of boxes and have been eating with other people so it’s taken us a while to get back into the swing of our usual routine. I’m so happy that we have found a house, and I will talk more about that soon but it’s a renovation project really so it will still be a little while before we are in there but I’m so excited that it already has a brand new lovely kitchen which is a really good size. The kitchen is the most important room to me in a house since I love to cook and for me a happy home is one in which we can entertain friends and family and make so many memories. Every major holiday or event is celebrated over the dining table and I’m so happy that we will have the space to cook and host people. Anyway enough about the kitchen and lets talk what I ate today!
Meal 1 was the recipe I posted this morning, a breakfast shake! It had raspberry, banana and vanilla and was so creamy and satisfying. Check the post out here if you haven’t already!
For meal 2 I had wholegrain rye crackers – a lighter way of getting a “pizza” taste. I added a little bit of pesto and tomato puree and grated a little bit of cheese with Italian herbs. I made some baked sweet potato wedges on the side with hot sauce because I was craving them! A bit of a mishmash meal but so good.
I was hungry and still at the computer so I had a snack of some Metcalfe’s savoury popcorn which tided me over!
I made some veggie kofta bites with a couple of slices of grilled halloumi and a really huge table salad which I had two servings of! It was so humid today I just wanted salad. It had spinach, baby leaf, peppers, spicy peppadew peppers, carrot, onion and tomato and it was so good. I served it up with my one minute healthy garlic dip which I eat pretty much every day now – recipe here!
I’m now sat with a cup of spearmint tea ready to unwind for the evening!
