It’s no secret that I love pizza, and it’s definitely no secret that I love Chobani. When I attended their recent blogger dinner, I found a recipe sheet tucked into my bag that called out to the pizza lover inside me. It was originally penned by Iris from Whatever Gets You Through The Day (recipe link here) and Chobani decided to share it with us. After looking over the original recipe, which is fantastic, I tweaked it a little to suit my nutritional needs and my tastes and whipped up a batch. I halved the recipe to make half a dozen, lightened them a little and made them exclusively wholemeal, with a little extra spice. I also omitted the chorizo to make a meat-free version. You can refer to Iris’s recipe here or use my amended veggie version which comes out at 150 calories per muffin. These are great for brunch as Iris suggested or for a snack. - 125g wholemeal flour
- 125g Chobani (or alternative Greek style yoghurt)
- 1 egg
- 2 tablespoons of extra virgin olive oil
- 50g light mozzarella
- 8 cherry tomatoes (add more or less depending on size and your taste)
- 1 heaped tablespoon of baking powder
- Salt, pepper, chilli and oregano to taste
Pre-heat the oven to 180 degrees and mix the flour, baking powder, salt, pepper and oregano together in a large bowl. If you’re using dried chillies or flakes, add them now, but I used lazy chilli from a tube so I added mine to the wet ingredients.
Combine the egg, chobani and oil in a bowl and slowly add to the dry mixture, stirring well.
Chop the cherry tomatoes into pieces and cube your mozzarella, and gently add to the doughy mixture.
Grease a muffin pan with a little spray oil, or use cases, and spoon your mixture into each well. I used an ice cream scoop to make my life a little easier.
Bake for 20 minutes or until a skewer comes out clean.
These taste amazing warm, but can keep for a few days in an airtight container so they’re great lunchbox options or make a fantastic lazy breakfast. Let me know if you try these and you can find more of my recipes here.
