By now you all know that my daily thoughts go something like this…pizza…pizza…and a little bit more pizza. I’m crazy about the stuff, and whilst I don’t advocate cutting out the real deal (what kind of sick twisted world would THAT be?) I do like to have a few tricks up my sleeve when I’m craving pizza and I either ate one the night before or it’s not the right time of day to be chowing down on a huge slice. I’ve previously done 200 calorie pizza rolls and 150 calorie pizza muffins, and if you don’t know by now, if a food exists, I will try to pizza-fy it. It’s a hobby!
Courgette pizzas are nothing groundbreaking, they have been floating around Pinterest and low-carb communities for a while, but I wanted to share my recipe for those of you who haven’t tried this, and also because it involves the best ever easy microwave pizza or pasta sauce. Seriously, you will never want to buy jarred italian sauces again when you can make this baby so easily. I have a more souped-up version for when I have the time, and a pan, but this is a stripped-down, easy peasy way to make it with only a microwave, so there’s no longer an excuse for eating preservative and sugar filled varieties!
You will need:
- 1 courgette
- tomato passata
- salt & pepper
- chilli (either flakes or as I prefer, the “lazy” squeezy chilli puree in a tube)
- garlic (again, a tube is great for this especially if you’re making this sauce at work
- fresh basil
First slice your courgettes. I like to use a mandoline but one of those slicers that tackles vegetables will work, you could even use a veggie peeler but this will make them either thick or very thin. All depends on your taste. I like to grill mine with a little rock salt first on each side so they lose a little bit of moisture but it isn’t essential!
Next take some passata, and add in garlic and chilli paste to taste. Season with salt and pepper and throw in some fresh basil leaves. Microwave for 30 seconds to soften the basil and release the flavours.
Spoon your tomato sauce on your sliced courgettes, and top with grated cheese. Grill or microwave for a couple of minutes, keeping an eye on them.
Eat and enjoy! I like to roll these up sometimes or eat with a knife and fork! This sauce is also fantastic to top pasta with in a pinch.
